Pineau des Charentes is the result of stopping the fermentation of the fresh, sweet grape juice by adding one-year-old Cognac. Pineau des Charentes will contain between 16.5% and 22% alcohol. Production is strictly controlled to assure high quality through proper blending and ageing. Bernard Boutinet's Pineau Des Charentes is deep gold in color and offers a predominantly sweet taste balanced by acidity.
